Almond and Choc Chip Cookies

INGREDIENTS

  • 200 g almonds Raw
  • 30 g oil eg macadamia
  • 34 cup brown sugar or rapadura, or coconut sugar
  • 1 egg or 1 Tbs chia seeds soaked in 3 Tbs water until thick
  • 12 tsp baking soda
  • 14 tsp sea salt flakes
  • 90 g dark chocolate good quality in small pieces

METHOD

  1. Preheat oven to 180 degrees Celcius and cover a baking tray with baking paper or a silicon mat.

  2.  In a Thermomix or food processor, add the almond meal and coconut oil and mix on speed 9 for 10 seconds (mixing by hand doesn't work for this step).

  3. Add sugar, chia egg, baking soda, vanilla paste and salt and mix on speed 4 for 10 seconds.

  4. Add chocolate and mix on reverse, speed 4 for 4 seconds. 

  5. Place tablespoon sized balls onto a lined baking tray and place in a 180 deg oven for 11 minutes (11 minutes exactly )

    And you will have the most delicious cookies
