Rice Flake Bircher Muesli

    

I usually use rice flakes to make porridge but I decided to use it to make a bircher muesli recipe and the verdict... I love it!
I am really loving this recipe as I have been a coeliac for 14+ years so I can't remember the last time I got to enjoy bircher muesli... until now!

Ingredients:

  • 1/2 cup of brown rice flakes
  • 1 tbsp of shredded coconut
  • 1 tsp of hemp seeds
  • 1 tsp of chia seeds
  • sprinkle of cinnamon
  • 3/4 cup of almond milk (or other milk)
  • splash of maple syrup 
  • toppings: Dec's crunch, coconut yoghurt, cacao nibs, fruit

Method:

  1. Combine all ingredients in a bowl or jar. Stir and then leave in the fridge overnight.
  2. Remove from fridge and add any of your favourite toppings and enjoy!


** Alternatively, you can prep servings ahead of time by just combining all of the dry ingredients and only adding the milk and maple syrup when you are ready to pop it in the fridge.
