Vegan Barbecue Sauce

A friend of mine inspired me to give Jackfruit a try after she raved about it being so delicious ๐Ÿคค
It is an ingredient that I had never heard much about before ๐Ÿคท๐Ÿผโ€โ™€๏ธ

I bought some cans last week and decided to give it a whirl... I cooked it in this homemade barbeque sauce and I added corn so it was a take on a mexican style. Simple to make but so tasty! ๐Ÿค—

Ingredients:
  • 1 can tomato sauce
  • 1 can tomato paste
  • 1/2 cup apple cider vinegar
  • 1/3 cup pure maple syrup
  • 2 tablspoons coconut palm sugar
  • 1 tablespoons Worcestershire sauce optional
  • 1 tablespoon dijon mustard
  • 1 tablespoon hot sauce optional
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt & pepper to taste

Method:

Add all the ingredients to a small saucepan and whisk until combined. Bring the mixture to a low simmer and partially cover with the lid. Cook for 10 - 15 minutes until the mixture has thickened.
Either use immediately or allow to cool completely and store in an airtight container in the fridge for 1 - 2 weeks.

Served with roasted potato coins (chips to dip) and other tasty bits... YUMMY! ๐Ÿ˜
