Choc Protein Pudding

    

A chocolate pudding that is dairy free, high in protein and rich and creamy. This will be your new favourite!

Ingredients:⁣⁣⁣⁣

  • 330gr sweet potato peeled and cooked (*see notes)⁣⁣⁣⁣⁣
  • 250gr silken tofu (drained)
  • 1/2 cup rice malt syrup
  • 1/4 cup maple syrup
  • 2 tbsp peanut butter
  • 3/4 cup cacao powder⁣⁣⁣⁣⁣
  • vanilla extract⁣⁣⁣⁣⁣
  • Pinch of sea salt⁣⁣⁣⁣⁣
Method:⁣⁣
  1. ⁣⁣Cook a medium-large sweet potato. I used an orange sweet potato and baked it in the oven at 200°C until it was soft (approx. 45 minutes). It's also possible to steam the sweet potato until soft.
  2. Let the sweet potato cool and then peel off the skin; the cooked and cooled sweet potato should weigh 330g.⁣⁣⁣⁣⁣
  3. Add all ingredients to a blender or food processor and blend until completely smooth, silky, and creamy.
  4. Dollop with coconut yoghurt, sprinkle with cacao nibs, add raspberries... so many options! They will all be yummy so enjoy!
